Banana Nut Muffins

  1. Preheat oven to 350°F. Grease or line a muffin tin.
  2. Mix together the bananas, eggs, brown sugar, oil, and vanilla.
  3. Add the almond flour, walnut flour, hazelnut flour, all-purpose flour, oats, baking powder, baking soda, cinnamon, and salt.
  4. Stir until just combined.
  5. Let the batter rest a few minutes so the oats can hydrate.
  6. Scoop into muffin cups.
  7. Bake until set and lightly golden, about 18–22 minutes.
