Banana Nut Muffins
Ingredients
- 2 very mushy small bananas (~3/4 cup mashed)
- 2 eggs
- 1/4 cup brown sugar
- 1/4 cup oil
- 1 tsp vanilla (optional)
- 1 cup almond flour
- 1/4 cup walnut flour or finely ground walnuts
- 1/4 cup hazelnut flour or finely ground hazelnuts
- 2/3 cup all-purpose flour
- 1/2 cup instant oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon (optional)
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F. Grease or line a muffin tin.
- Mix together the bananas, eggs, brown sugar, oil, and vanilla.
- Add the almond flour, walnut flour, hazelnut flour, all-purpose flour, oats, baking powder, baking soda, cinnamon, and salt.
- Stir until just combined.
- Let the batter rest a few minutes so the oats can hydrate.
- Scoop into muffin cups.
- Bake until set and lightly golden, about 18–22 minutes.
